Can I keep my data on my own premises, or does it have to be in the cloud?

How does it stop the same stock being double-booked?
Every item is booked against specific dates. When you reserve 100 chairs for Saturday, the system holds them for that date and shows the rest as unavailable, so you can't accidentally promise the same stock to two events.
